1 Prep fries

Preheat the oven to 200°C/180°C fan. Slice the potatoes (skins on) into fries. Add the fries to a large baking tray with a drizzle of vegetable oil and a generous pinch of salt. Toss the fries in the oil until fully coated. Roast in the oven for 30 min or until golden and crisp.

2 Make patties

Meanwhile, combine the beef mince, garlic paste and soy sauce with the panko bread crumbs. With clean hands, knead the meat mixture until soft and fully combined (see pro tip). Shape the mixture into patties and refrigerate.

3 Prep vegetables

Meanwhile, wash and separate the Boston lettuce leaves. Slice the tomatoes. Finely chop the gherkins. Finely chop the dill. Peel and finely chop the shallots.

4 Make sauce

In a bowl, combine the mayonnaise, ketchup, chopped gherkins, shallots, garlic powder, Dijon mustard and chopped dill with a pinch of salt - this is your burger sauce.

5 Fry patties

Heat a non-stick pan over a medium-high heat with a drizzle of olive oil. Once hot, add the patties and fry for 5 min on each side or until browned and cooked through. Once browned, top with the burger cheese, cover with a lid and cook for 1 min further or until the cheese has melted.

6 Assemble

Load your burger buns with the lettuce leaves, sliced tomatoes, cheese patties and the burger sauce. Serve the fries to the side along with any leftover burger sauce.

Tips for fussy eaters

Don't add the dill to your burger sauce!

Pro tip

The longer you knead the mince meat mixture, the more tender your patties will become. They'll also stick together better!
