Instructions

1 Prep wedges

Preheat the oven to 200°C/180°C fan. Slice the potatoes (skins on) into wedges. Add the wedges to a large baking tray with a drizzle of vegetable oil and a generous pinch of salt and the smoked paprika. Toss the wedges in the oil until fully coated. Roast in the oven for 30-35 min or until golden and crisp.

2 Make patties

Meanwhile, combine the beef mincedried oregano and soy sauce with the panko bread crumbs. With clean hands, knead the meat mixture until soft and fully combined. Shape the mixture into patties (see pro tip) and refrigerate.

3 Prep vegetables

Meanwhile, wash and separate the gem lettuce leaves. Slice the tomatoes. Finely chop the chives. Slice the cheddar cheese.

4 Make sauce

In a bowl, combine the mayonnaiseketchup, chopped chivesgarlic powder and Dijon mustard with a pinch of salt - this is your burger sauce.

5 Fry patties

Heat a non-stick pan over a medium-high heat with a drizzle of vegetable oil. Once hot, add the patties and fry for 5 min on each side or until browned and cooked through. Once browned, top with the cheddar cheese slices, cover with a lid and cook for 1 min further or until the cheese has melted.

6 Assemble

Meanwhile, place the burger buns in the hot oven for 3-4 min or until warmed through. Load the warmed burger buns with the lettuce leaves, sliced tomatoescheese patties and the burger sauce. Serve the wedges to the side along with any leftover sauce.

Tips for fussy eaters

To make this one extra child-friendly, leave the Dijon, chives and smoked paprika out!

Pro tip

If the patties are looking too fat to fry, halve them and shape them into two instead.
