Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Boil buckwheat

1 Boil buckwheat

Bring a large pot of salted water to the boil. Once boiling, add the buckwheat and cook for 15 min or until tender. Drain once tender and allow to cool slightly.
Tip! Rinse the buckwheat under cold running water to cool.
Make kebabs

2 Make kebabs

Meanwhile, finely chop the parsley. In a large bowl combine the beef mince, garlic onion powder, a pinch of white pepper, smoked paprika, coriander cumin powder, parsley and salt. Divide the mixture into 4 pieces and shape each piece into a kebab.
Fry kebabs

3 Fry kebabs

Heat a large non-stick pan over a medium-high heat with a drizzle of oil. Once hot, add the kebabs. Fry, covered, for 4-6 min on either side or until cooked through.
Prep salad

Meanwhile, de-seed and finely chop the pepper. Chop the cucumbers into small bite-sized pieces. Add the honey, harissa (spicy!), pomegranate molasses, olive oil, salt and a generous squeeze of lemon juice to a large bowl and whisk. Add the cucumbers and peppers to the bowl. Set aside.
Finish salad

Add the cooled buckwheat and rocket to the bowl. Toss.
Tip! Don't add the rocket too far in advance or it will go soggy!
Serve

6 Serve

Divide the salad among plates and serve the kebabs alongside. Crumble the feta over the buckwheat salad.
