Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Marinate chicken
In a large bowl, combine sesame oil, soy sauce, minced garlic and ginger, and chilli powder. Mix well. Add chicken breasts and marinate for 10 minutes.
2 Make salad
Deseed and cube watermelon. Mix in a bowl with mint, chopped red onion, rinsed and dried rocket, sliced redchilli and sliced red radishes.
3 Fry and serve
Heat oil in a pan over medium-high heat and fry chicken for 5 min until cooked through. Let rest for 5 min. Slice and serve on top of the salad with a drizzle of olive oil and balsamic vinegar, and a sprinkle of pumpkin seeds.
