Steak Fajitas in Lettuce Cups

with Sour Cream and Cheddar

Instructions

1 Marinate steak

On a plate, turn the steaks in the fajita seasoningchipotle powder (spicy!)garlic powder and salt

2 Fry steak

Heat a pan with a drizzle of oil over a high heat. Once very hot, add the steaks and fry them for 2 min on each side or until browned and cooked to your liking. Set aside to rest for 5-10 min.

3 Prep

Meanwhile, finely slice the peppers. Peel and finely slice the onion

4 Fry vegetables

Return the pan (no need to wash it!) to a medium heat with another drizzle of oil. Fry the onion and bell peppers for 3-4 min until slightly softened. Season generously with salt and pepper.

5 Prep garnishes

Trim and separate the lettuce leaves. Finely slice the red chilli. Chop the coriander. Slice the lime into wedges.

6 Serve

With a very sharp knife, slice the rested steak as finely as possible. Fill the lettuce leaves with the fried vegetablesfajita steak and cheddar cheese. Serve with the sour creamred chilli slices (spicy!)fresh coriander and lime wedges. 

Tips for fussy eaters

Serve with tortilla wraps for a starchy alternative!
