On a plate, turn the steaks in the fajita seasoning, chipotle powder (spicy!), garlic powder and salt.
Heat a pan with a drizzle of oil over a high heat. Once very hot, add the steaks and fry them for 2 min on each side or until browned and cooked to your liking. Set aside to rest for 5-10 min.
Meanwhile, finely slice the peppers. Peel and finely slice the onion.
Return the pan (no need to wash it!) to a medium heat with another drizzle of oil. Fry the onion and bell peppers for 3-4 min until slightly softened. Season generously with salt and pepper.
Trim and separate the lettuce leaves. Finely slice the red chilli. Chop the coriander. Slice the lime into wedges.
With a very sharp knife, slice the rested steak as finely as possible. Fill the lettuce leaves with the fried vegetables, fajita steak and cheddar cheese. Serve with the sour cream, red chilli slices (spicy!), fresh coriander and lime wedges.
Serve with tortilla wraps for a starchy alternative!
