Ingredients

Rump steak
400 Grams
Vegetable oil
1 Tbsp
Salt
1 Tsp
Red pepper
1 Piece
Yellow pepper
1 Piece
Red onion
1 Piece
Fajita seasoning
5 Grams
Smoked paprika powder
2 Grams
Garlic powder
5 Grams
Chipotle powder
2 Grams
Black pepper
0.5 Tsp
To serve
Boston lettuce
1 Piece
Lime
1 Piece
Fresh coriander
15 Grams
Grated cheddar
60 Grams
Sour cream
60 Grams

Tips for fussy eaters

Serve with tortilla wraps for a starchy alternative!

Pro tip

To turn this one into a fiesta, serve with guacamole, nachos, salsa and margaritas.

Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

1 Fry steak

Slice the 1cm steaks into strips. Heat a large non-stick pan over a high heat with a drizzle of oil. Once hot, add the steak strips with a generous pinch of salt and fry for 2-3 min. Transfer the strips to a plate and reserve the pan (no need to wash it!).

2 Prep

Meanwhile, finely slice the peppers. Peel and finely slice the onion

3 Fry vegetables

Return the pan to a medium heat with another drizzle of oil. Fry the onion and peppers for 3-4 min until slightly softened. Add the fajita seasoning, smoked paprika, garlic powder a pinch of chipotle (spicy!). Fry for 2 min further. Season generously with salt and pepper. Add a splash of water if the spices are sticking to the pan.

4 Prep

Meanwhile, trim and separate the lettuce leaves. Slice the lime into wedges.

5 Add beef

Return the beef strips and any beef liquid to the pan. Cook for 1 min.

6 Serve

Pick the coriander leaves. Fill the lettuce leaves with the onions, peppersfajita steak and cheddar cheese. Serve with the sour cream, coriander leaves and lime wedges.
